Roasting is the most delicate stage in coffee production. To obtain a perfect balance between aroma and intensity of taste, the beans must reach a perfect level of shearing taking into account that they are all different from each other in shape and size. This is possible thanks to slow roasting, a traditional method, different from industrial processes which allows for uniform cooking.
